Bison Bison

The buffalo, properly known as the American bison, is the largest mammal native to North America and may flourish anywhere there are grasslands or meadows. In prehistoric times, these animals roamed this continent in vast numbers. Their population has been estimated at sixty million in pre-Columbian times, and they were once part of the largest community of wild animals that the world has ever known.

By 1889, only 1,000 buffalo existed. Today, thanks to conservation efforts, their numbers have reached 350,000, and growing.

The females roam in herds of up to 60 animals, whereas the males travel either alone or in small groups. Only during the breeding season will they join a group of females.

Many people are mistakenly under the impression that buffalo are slow and ponderous. The fact is, buffalo can sprint to 40 mph, they can out-maneuver most horses with agility equal to deer, and they can also jump and traverse rocky, unstable terrain. Adding to the inherent danger of such animals, buffalo are unpredictable and may charge people or vehicles for no apparent reason. Buffalo are very protective of the herd and react as a group when danger presents itself.

The American bison is a hardy animal that has been transported to and thrives in such harsh and diverse environments as Kauai (Hawaii), Florida, Texas, and Kodiak Island - where they have been known to hold their own against Kodiak bear.

Bison meat is highly prized, as it is far more lean and has less saturated fat than beef, pork, or chicken, making it one of the healthiest meats to consume.
